Min Bei Shui Xian is famous for unmatchable fragrance which is compex and not easy to put into words. You will distinguish scents of rose petals, aromatic spices, fresh herbs, raisins, sandal tree wood and peach flowers. Min Bei Shui Xian produces a delicate russet-orange infusion with long-lasting, fruity aftertaste.
Min Bei Shu Xian is harvested from tea trees grown 'bush' style. These bushes are single-trunk and bear just a few branches thus producing only a small quantity of large leaves (the opposite of the usual manner and desired effect of bush growth, with multiple trunks and plentiful small-leaf production). Min Bei Shui Xian, as other oolong teas from Northern Fujian, is twisted into strips only. The shape of the strips is supposed to resemble ‘the head of a dragonfly and the legs of a frog'.
It is said that Min Bei Shui Xian tea tree variety was first discovered in a ‘Zhu Xian' cave nearby the Tai Lake. The name of the cave translates: prayers to the gods. The locals named the tea after Shui Xian flowers, which are known for their light and refreshing scent, because of the similarity of pronunciation between ‘Zhu Xian' and ‘Shui Xian' (Shwey Shien).
