When brewed, Ti Guan Yin will please your eyes with a golden-green liquor with the leaves unfurling and dancing gracefully in the water. Origin:Anxi, southeastern part of Fujian Province, ChinaAnxi is often reffered to as ‘Chinese Tea Capital". Well known for its oolong cultivars and manufacturing methods which involve loosely fisted rolling, moderate oxidation and roasting. Harvest Period: Spring 2009 History of the tea:The tea is named after Guan Yin, the only female deity in the Chinese pantheon of deities. She is known as the Goddess of Mercy, believed to be the female incarnation of the many-armed compassion Buddha Avalokitesvara. Ti, meaning iron, is a reference to the iron jars that precious tea was once stored in. Legend says that the Qung emperor Kangxi (1661-1722) prayed to the goddess for the return of his health during a bout with smallpox. In aanswer to his prayers the Goddess appeared to him in a dream. In his dream she brought him to a place where a few tea bushes were growing on a mountainside. The emperor drank tea from the bushes and recovered from his illness. To repay the kindness, the Emperor helped the people of the region cultivate the tea bushes and prosper from it in the name of the Goddess. Kuan Yin then showed the emperor that the leaves of these tea bushes bore a marked impression. He plucked one from the bush, after which the leaf bore the impressions of both of their thumbs. These two tiny marks have always distinguished the leaves of true Tie Guan Yin bush varieties. Emperor Kangxi proclaimed Tie Guan Yin famous for all eternity in China and from that time on the Yieguanyin tea industry has thrived.
